Foto Friday Recipes



Anyone who has grown their own veggies will know that sometimes we are left with an excess supply. Below is a simple sauce that I made with tomatoes and herbs from my garden. No need for measuring or weighing just use any quantities you like but please don’t overwhelm the flavors with too much garlic.

Ingredients: Tomatoes, Onion, Celery, Garlic.
Basil, Oregano, Sage
Pepper & Salt

1. Chop tomatoes into large chunky pieces (skins can be removed if you want to).

2.Chop Onion and Celery to desired size.

3.Finely chop or grind herbs and garlic (packaged herbs can be used if you don’t have fresh).

4.Place all ingredients in a large pot and simmer with lid on stirring occasionally.

5.When vegetables are soft remove lid, add pepper & salt to taste and continue simmering until the mixture is reduced to desired consistency.

6.Cool and store in containers in freezer.

The sauce can easily be defrosted and ready for use. Add some mince meat and serve with pasta or spread on toast, brochette or a pizza base. It can also be used as a sauce for steak or chops.

Spot..have you thought about growing a tomato plant in a pot and erecting a clear plastic cover over it? doesn't have to be elaborate....sort of like a mini glass house effect...make sure it gets some air though.

Cammie....that's a great idea if it's made thick enough with some taco seasoning added it would be great as a salsa served with avocado maybe. You could also add some cream or sour cream and have a creamy tomato soup.

Msam...Would Syca's sushi do for an entree?...bit of a mixed bag for a meal I know but if you provide a couple of bottles before dinner and after who would know?....lol

Tom..Call it tomato something..as I have just discovered it can be a sauce, salsa or soup and if you replace the savory herbs with sweeter spices and some brown sugar it can even be used as a relish/chutney.

I am discovering more and more uses for my excess tomatoes..yippee...they are too good to waste....if anyone else has ideas please feel free to let me know.
