GAG !!! JD & Max LOVE Mortadella fried for sandwiches or for breakfast with eggs and pancakes. I scored about 10 lbs today enough for their treat and send some back with Max to Chicago. Mortadella is a large Italian sausage or luncheon meat made of finely hashed or ground heat-cured pork, which incorporates at least 15% small cubes of pork fat. It is traditionally flavored with black peppercorns ( red arrow ) . Mortadella has a mild pork flavor that is savory and slightly smoky. However, its taste will vary depending on the blend of seasonings in the pork mixture. Common mortadella seasonings include black pepper, salt, pistachio, myrtle berries, cinnamon, cloves, nutmeg, and garlic. |

Our Fareway Store just happened to have this large package of Mortadella in the meat-case as of yet unopened. I honestly don't care for it but I will make a 1/2" slice to slow fry in a pan. Those two guys will chow down on this specialty meat with Ritz crackers dressed with a spicy Belgian Honey Mustard . Even MUTTs Inc love Mortadella.

I tend to agree with you that it has too high a fat content to be easily liked. However, the spiciness sounds like it would be a good sandwich meat or cracker topping. Personally, I have never heard of it or seen it at a deli counter. If you give it a good hot fry in a pan, can you cook some of the fat out of it? That might make it more consumable by folks like you and me.

I spent all morning in my shop welding up a bunch of brackets and hooks for hanging cords etc for my neighbor. After salad and sammy for lunch, I rested for a bit before making supper of ricey num num. Then looked at the Good Doctor in the TV. It was a pleasant sunny, calm, 33F here today. Much warmer in Calgary, but we in the village were not so privileged.

For some reason, my internet speed is extremely slow tonight, so it might disappear altogether soon. If I am not in the lobby, that could be the reason.
