Fiddleheads

So with warmer weather come fiddleheads. These are the first signs of the Osterich fern, which are everywhere in my yard. Sautéed with garlic and mushrooms, one bite and you totally get the phenomenal expense on the market. Luckily for about a week each spring, they are free for the picking.

I think they are big in Northeastern US and Southeastern Canada. They have a flavor like a fresh green bean with a hint of asparagus.

Twilight those look yummy! I remember years ago buying the frozen variety in the grocery store. I don't see them anymore. I really enjoyed them as they were a seasonal thing.
