Eggplant Parmigiana is delicious...but... let's face it, we don't all have the same taste buds. Now I feel the same about asparagus as you do about eggplant. I can't even stand the smell of asparagus...although I have tried raw tips in a salad and it was digestible! lol

Try eggplant parmesan. You will never know it is the same thing you didn't like.

I just Googled Eggplant and found several answers.

It is actually a fruit but eaten as a vegetable.

Check it out...interesting.

At home, I am the only who likes eggplant. I love canned asparagus, too.

    3.Mix 1 tbsp. oil into the crumb mixture. Stir to blend.
    4.Coat or spread crumb mixture onto eggplant slices.
    5.Heat oil in a skillet. Gently fry the eggplant slices until rich golden brown.
    6.Drain on paper towels. Transfer to a serving platter and serve hot.
