Eggplant Parmigiana is delicious...but... let's face it, we don't all have the same taste buds. Now I feel the same about asparagus as you do about eggplant. I can't even stand the smell of asparagus...although I have tried raw tips in a salad and it was digestible! lol

I just Googled Eggplant and found several answers. It is actually a fruit but eaten as a vegetable. Check it out...interesting.

At home, I am the only who likes eggplant. I love canned asparagus, too.

Eggplant is low in fat, protein, and carbohydrates therefore good for those who wants to reduce weight. Rosie mentioned about eggplant frittata and maybe you can try this dish. Both dishes are delicious. Fried Eggplant Ingredients : ◦2 large eggplants ◦1 tbsp. parsley, chopped ◦1 tsp. oregano ◦1/4 cup dry breadcrumbs ◦1 onion, chopped finely ◦salt and pepper ◦1 tbsp. olive oil ◦oil, for frying Cooking Procedures : 1.Slice the eggplants crosswise. 2.Combine parsley, oregano, breadcrumbs, onion, salt and pepper in a bowl. 3.Mix 1 tbsp. oil into the crumb mixture. Stir to blend. 4.Coat or spread crumb mixture onto eggplant slices. 5.Heat oil in a skillet. Gently fry the eggplant slices until rich golden brown. 6.Drain on paper towels. Transfer to a serving platter and serve hot. Enjoy !
