From Prairie's Kitchen...


Here's that wonderful FAT-FREE carrot/pineapple cake recipe I promised everyone in the chatroom the other night.

Carrot-Pineapple Cake

2 1/2 C. unbleached flour
1 1/3 C. sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
2 cans (8 oz. each) crushed pineapple in juice (including the juice)
1/4 C. skim milk
4 egg whites lightly beaten
2 teaspoons vanilla extract
2 C. (packed) grated carrotts
1/2 C. golden raisins
1/3 C. choppped pecans

Cream Cheese Icing

8 oz. nonfat or low-fat cream cheese
1 C.nonfat ricotta cheese
1/2 C. icing sugar
1 teaspoon vanilla extract

1.Combine the flour, sugar, baking soda and cinnamon in a medium sized bowl, and stir to mix well. Stir in the pineapple, including the juice, and the milk, egg whites, and vanilla extract. Fold in the carrots, raisins and pecans. Mix in well.

2.Coat a 9" x 13" pan with nonstick cooking spray. Spread the batter evenly in the pan, and bake at 325 degrees F. for about 45 min. (NOTE: THAT IS THE TIME IT TAKES ON MY CONVECTION OVEN.) or just until a wooden toothpick inserted in the centre of the cake comes out clean. Cool to room temperature.

3.To make the icing, combine all of the icing ingredients in a food processor, and process until smooth. Spread the icing over the cake, and serve immediately. Refrigerate any leftovers.

ENJOY!!!


I can honestly say this is the best carrott cake I've ever had....and WOW.....NO FAT!!!

Thanks so much. Carrot cake is my favourite, but most recipes call for at least a cup of oil.

Would this count as one serving as fruits and vegetables??? I think so. Good. Tonight I'll have my skinned chicken breast, then head right to the cake!!!!!

p.s. Glad you're back, Classic. Didn't know you had been ill. Get lots of rest so you'll be high-steppin' at Nashville!

Fresh Emerald...I forgot to add the nutritional facts to the end of the recipe. They are (per serving):
Calories:215 Fat.3g. Protein.7 g.
Cholestrol: 3 mg. Fibre: 1.4 g. Sodium: 268 mg.
I'm not sure if that helps you or not.
