My home made ENCHILADAS, ENTOMATADAS, AND GREEN ENCHILADAS RED ENCHILADAS, ENTOMATADAS, AND GREEN ENCHILADAS By Maria Miles523 Red Enchiladas Ingredients: 4 red dried pasilla peppers 1 red large tomato 3 cloves 1/4 of teaspoon of cummins 2 teaspoons of sugar Add salt to your taste, you may use garlic salt. 4 cups of water 8-10 tortillas 3 spoons of oil 1/4 of diced onion Fresh cheese of your preference (mozzarella, white cheddar, or Mexican cheese) 4 chicken whole legs Procedure to make them: Wash the red peppers and take the seeds out. In a pan, put the red peppers, the tomato, 1 teaspoon of the diced onion, the cloves, cummins, and bring it to boil at a slow heat. Blend all the ingredients in the blender. Use a strainer and put sauce in a pan large enough to be able to deep the tortillas in once the sauce is ready. Add the sugar an the salt to your taste. Boil the chicken and shred it. Add salt to your taste to the chicken while it is boiling. The oil is put in a pan where you will pass the tortillas in the hot oil to sort of fry them, leaving them soft as you do it. Place the fried tortillas in a plate. Use a paper napkin to get the excess of oil in them. The red chili sauce is boiled at low heat as your deep the tortillas in it. Once you are ready to serve them, submerge the fried tortillas in the red sauce, place them in plate, fill them with the shredded chicken and roll them. Add more sauce on top of them and sprinkle the cheese on them, the diced onion, and put them in the microwave oven for about 40 seconds to allow the cheese to melt well. Enjoy them. Serving suggestion: You can make white rice and serve it with the red enchiladas. A green salad also goes well with them. Swiss Enchiladas or ENTOMATADAS Ingredients: 2 ripe tomatoes 1 small box of tomato puree 1 cinnamon stick One slice of onion 1/4 teaspoon of garlic salt 2 teaspoons of sugar 4 Ritz crackers 3 spoons of oil 6-8 tortillas Fresh cheese of your preference 3 cups of water Wash the tomatoes, Put them in a pan with the small box of puree of tomato, the cinnamon stick, the slice of onion, The garlic salt, the sugar, and the 4 ritz crackers. Let all the ingredients boil for a few minutes. Blend them and strain the sauce in a pan. Fry the tortillas, leaving them soft. Deep the tortillas in the tomato sauce and fill them with cheese, or chicken also. If you desire, you may serve them with a steak. Sprinkle the cheese on top and add diced onion if desired. Add some more sauce to the entomatadas and put them in the microwave oven to allow the cheese to melt well. Serving suggestions: With rice, with a salad, or with a whole leg of home fried chicken on a side, or steak. The entomatadas are a favorite dish of those who do not like to eat hot sauces. They are famous in Mexico. Green Enchiladas Ingredients: 4 green poblano peppers, or 4 Ortega green peppers 4 spoons of sour cream 2 cups of milk 1 small onion garlic salt to your taste 3 spoons of oil 6-8 tortillas Cheese of your preference Procedure: If you get the fresh green peppers, you will have to roast them and put them in a plastic bag to bring them to a sweat in order to peel them and get the seeds out. If you use the Ortega peppers, just put them in the blender with the sour cream, the milk, the onion, the salt. Sauté the sliced onions. Once you have the sauce ready, put it in the pan where you have the sautéed onions. Simmer the sauce. Fry the tortillas and leave them soft. Deep the tortillas in the sauce and add the cheese. Roll them and place them in a dish to put them in the microwave oven when you are ready to serve them. You may also stuff them with chicken, or serve the chicken on a side, or a steak, and rice. Note: All of the enchiladas may be rolled of stacked up and filled in the middle. These recipes are all very good. I like them a lot. They will make everyone happy at a dinner. I hope that all of those who dare try these recipes let me know if you like them. All recipes may be slightly changed to suit your taste. Like using pan fried cicken instead of the shredded chicken. Miles....am going to print out your recipes and try them. Haven't cooked in a while, but these made my mouth water. So, I'll try them in a few days and invite some friends over. Thanks. Question, though. Pasilla peppers---can I use Anaheims or Ancho? Haven't seen Pasilla here, but will look again.
