Cara Cara Cara Cara Oranges look like regular oranges on the outside, but with pink or red flesh on the inside. They're unlike any other oranges, making them fun and different! They don't show up in our stores very often. When I seen them I knew exactly what I'd do. Soooo I purchased a bag. Orange Marmalade ! I used HRH Elizabeth's royal recipe . You start by pealing off the outside peal after washing thoroughly. You cut the peal into thin slivers. Next you cut the oranges in half and juice them. After the juicing you extract the inner fruit fibers leaving the pithy skins which have a bitter taste to them. With the fruit and juices in the blender you puree the contents and pour over the peal slices. Bring this to a full rolling boil. Cover your pan and let it set overnight. Next day return you pan to heat bringing to a rolling boil again. Figure 2-cups juice mix to 1-cup of sugar. You also need to add fruit pectin allowing 1-tablespoon of pectin for every quart of liquid.. Add your sugar / pectin combo slowly stirring constantly allowing the liquid to retain it's boiling point. Clear your afternoon schedule to keep an eye on the pan while you wash and sterilize your jars & lids. You will notice a change to the boiling pattern whereby necessitating the need to lower the temp gradually along with a thickening of your juices. When your "jell test" proves the right consistency jar up your marmalade! After canning up the marmalade making certain the lids sealed YOU'VE DONE IT !!! I ended up with 1-full pint and this part jar of HRH's favorite marmalade for scones. Isn't it a pretty ruby red ? **** I did need to add some regular Minute Maid orange juice at the second cook down for the ratios to work out cooking off the mix. The whole house had a sweet citrusy scent. |

Darter, that marmalade sounds like it would be super delicious, and the color is amazing. A bit too much work for this old coot to tackle though. Thanks for posting this fantastic recipe from the house of Royals.

To be honest, I have never seen a Cara Cara orange. I'll have to keep my eyes open next time I go to a huge supermarket.
